As part of our stay in Valencia, when we arrived at the hotel on Friday evening, we decided to eat at one of the city’s Michelin-starred gourmet restaurants, Lienzo.

The concept
The concept is quite unique: the cuisine is totally local but completely molecular and quite spectacular. You’ll see it in the succession of dishes.
The chef is a woman.
The setting
The setting is quite unique, and very minimalist. Very little decoration and a rough floor. The kitchen opens onto the dining room.
The menu
There’s no à la carte menu here, just several blind tasting menus. We’ll opt for the large selection of 15 dishes, indicating our allergies or foods we simply don’t like.
The meal and the dishes
The whole is very successful, here are the dishes we were able to taste:
Melon with Valencian cocktail: very fresh
Cheese and honey: superb balance
Ravioli: an interesting combination of tastes
Nougat: interesting taste but disgusting texture
Eel and pumpkin in teriyaki sauce: a bit special
Vegetables with beurre blanc and pourtargue: very well-balanced
Potato gratin with chantilly and oscietre caviar: Fine and decadent
Raw shrimp, corn sauce: amazing texture, extremely melt-in-the-mouth
Squid with cream sauce and squid ink: super tender
White beans, meat sauce and mussels: interesting
Fried fish with lemon marmalade: very well-balanced, the fried fish blends perfectly with the acidity of the lemon.
Rolled 7 hours cooked lamb, potato gratin, black lemon mousse: succulent
Valencian strawberries, avocado ice cream: excellent, not too sweet
Beehive, smoked ice cream: very sweet but excellent – a change from chocolate
The service
The service is absolutely perfect, like clockwork. The sommelier will recommend a few wines by the glass that will be absolutely perfect without breaking the bank.
The atmosphere
The decor is minimalist and, as a result, the atmosphere is a little cold. A little background music would be welcome.
Bottom line
An excellent dinner and unbeatable value for money for a Michelin-starred restaurant, even in Spain!
