After Anne-Sophie Pic who signs the menu of the Air France business class,it is Michel Roth who will sign the menu of the prestigious “La Première” class for the 1st Quarter of 2019.
Throughout his career, Michel Roth has worked alongside the greatest French chefs and in prestigious establishments such as L’Espadon at the famous Ritz on Place Vendôme or the Grand Hôtel Président Wilson in Geneva.
On the menu:
January 2019
- Farm poultry glazed with rare pepper and citrus honey, served with caramelized pineapple and mango and stewed vegetable sticks
- Duo of shrimps and squids with a tarragon lobster sauce, sautéed baby spinach and red Camargue rice
February 2019
- Beef fondant, pan-fried foie gras and their sauce with truffles pan-fried with asparagus, ceps and truffles
- Pan-fried scallops flavored with tartuffin, golden polenta and snow peas
March 2019
- Brill fillet with creamy mussel juice, served with stewed green vegetables
- Chicken supreme flavored with olives and black truffles, peppered artichokes and macaroons Viennoise
- Veal simmered with verbena, fricasseed vegetables and morels
